They’re just sooo cute! Do you have a snowy Christmas where you’re at? Ours has melted and turned to slush…still hoping for fresh, snowman makin’ snow this weekend

Have you ever tried quail eggs? I’ve been reading a lot about them recently, and it turns out they are super nutrient-rich little things!
I once had a neighbor who fed her 3 dogs quail eggs daily, and swore that the eggs were helping her older dogs with a full range of health issues. Definitely worth looking into if you have a furry friend who needs a boost.
Look for quail eggs at your local farms, or ask your local grocer to carry them.
Makes 8-10 servings

Ingredients:

16-20 large quail eggs, hard boiled, cooled, and peeled
peppercorns
rosemary sprigs
about 10-12 pitted black olives
1 small carrot
bamboo skewers


Instructions:
Slice the olives so that you have 8-10 1/4-inch-thick slices. Add a small end of olive to each to make it resemble a hat as shown in the pictures.


Cut your carrot into tiny pieces to make the little noses.
Oh so slightly cut off the top and bottom of the eggs.



Insert a skewer through the center of 2 eggs to create your snowmen.



Stick the tip of the skewer in the eggs to make small holes for the buttons and nose. Place a peppercorn into each hole and a piece of carrot for the nose.

Stick a small rosemary sprig on the side for the broom.
Add your olive hat to finish the snowman look, then place it on a platter.

Repeat with remaining ingredients.
